Dexters are a smaller heritage breed, which means a more manageable freezer commitment than conventional beef. A whole Dexter typically hangs around 300-350 lbs, so a half or quarter is a great option for families who want quality beef without needing a second chest freezer. The smaller frame size also means a higher ratio of meat to bone, and the beef is well-marbled with a rich flavor that stands out from commercial breeds. We sell whole, half, and quarter shares. Whole pastured Cornish Cross chickens raised in batches right here in Spotsylvania, VA. Our birds are raised on pasture in mobile shelters, moved daily onto fresh grass. No hormones, no antibiotics. They get sunshine, bugs, and room to move around the way chickens should. Cornish Cross birds dress out at around 5-7 lbs, making them a perfect fit for a family dinner or a weekend roast. The difference between a pastured bird and a store-bought one is hard to miss - firmer texture, more flavor, and a rich golden broth from the bones.
